Fried Green Beans (any type) with New Potatoes
Fried Green Beans (any type) with New Potatoes

Ingredients:

  • 2 lbs new potatoes
  • 1/2 lbs green beans (green, pole, purple pole...) tipped and de-strung
  • Salt and Pepper
  • 3 tbs cooking oil or melted lard
  • Butter (not margarine please)

Directions:

  • Scrub potatoes and place in a large pot
  • Cover with water plus a few inches and bring to boil
  • Reduce heat to slow boil and cook until potatoes are tender but not falling apart.
  • Set potatoes aside leaving in water in pot with cover
  • In large skillet heat oil
  • Add green beans and cook until tender/crisp
  • Set skillet aside with green beans still in it to keep them warm
  • Drain potatoes and spoon servings onto plates
  • Place some green beans on top
  • Serve with salt and pepper to taste
  • Lavish with butter (more please!)
This makes a great main dish along with fresh bread
Fresh chives make a nice garnish for this dish also
